The Ratio of Dry and Fresh Herbs

The Ratio of Dry and Fresh Herbs Herbs are expensive to buy, but because they take so little space, they are also really easy to grow your own. It is incredibly satisfying to grow an array of herbs in containers on a deck or front step or even inside during the winter. We chose to make use of every corner of our property by planting perennial herbs in the landscaping. Chives and basil are always featured in our vegetable garden. Herbs also grace our deck and lawn sitting areas along with our potted flowers. When we have harvested all we need to store for the winter, we let the herbs flower and they do attract a lot of bees and butterflies! The grocery store supplies fresh herbs either in tiny flat plastic boxes, or in small bunches, at quite a hefty price. When we get home though, we often find that the recipe only calls for a Tbsp. of that herb. Of course we can extend the life of any fresh cut herb by wrapping the stems in a damp paper towel and place the entire bunch inside a bag fo...

Uncommon Ingredients Explained

Uncommon Ingredients Explained  Clear Jel is a refined cornstarch that reacts better for freezing and canning recipes in particular; cornstarch tends to go cloudy in these situations. Clear Jel is used in the same proportion of cornstarch (1:1) in baking recipes. Like traditional cornstarch and the health store alternatives - arrowroot and potato powder - this product needs to be combined with the sugar (or flour) prior to adding to any other ingredients in order to reduce clumps from forming.   Sea salt is healthier than regular table salt; with its reduced processing it also has a smaller ecological impact. It is a natural source of iodine, which, among other nutrients, is essential for a healthy sex life. A local herbal consultant once told us that sea salt can also be used in place of Epsom salts in your bathwater.    Tamari is considered to be less salty than soy sauce and is often stocked in health food stores. You can find low-salt versions of both tama...

product review

-- Product Review --  I have fond memories of a veggie slicer my late mother used to have. Mom and I used to do a lot of processing from our garden harvests, and those that were generously shared with us – and I remember well the cramped hands and tired fingers before we got the slicer she once had. I did receive that slicer as part of her legacy she left me but it was all rusty and useless. I kind of lamented that. So when I was invited by Tad Stephens (co-founder of   Eldhus.com ) to try out their special vegetable slicer I just had to jump at the chance. You know, I was skeptical of this product for a few reasons, the first being that the 3.2 oz. ABS plastic material seemed too lightweight and that had me wondering about quality in regards to how fragile it might prove to be. Another concern I had upon opening the package was if the white plastic would stain easily. I am grateful to share that I really enjoy using it...
