Make Your Own Citrus Zest

Make Your Own Citrus Zest  Have you seen a recipe calling for citrus zest and wondered, "What the heck is that?" It can sometimes be frustrating to find it in the store, and when you do the price tag can be a little shocking. Today, we are going to explain how easy it is to make your own citrus zest.  Orange Zest, citrus zest or citrus powder are interchangeable terms all referring to a similar product - to simplify we use the term ‘citrus zest’. Be warned: while one can use lemon juice, or frozen orange juice concentrate to replace the zest requested in the recipe - because these are wet ingredients it can affect the consistency of the recipe. Dehydrated zest will absorb, rather than contribute moisture to the recipe. Fresh zest will have a more vibrant flavour but is very difficult to keep on hand and may result in more food waste - if the fruit isn't consumed in a timely fashion. Like Cajun seasoning, hot sauce or paprika, zest is used to bring out other flavors. It wi...

Kudos !

Kudo's !!  Kudo's to the Columbia Land Trust who had recently transferred 82 beautiful, natural acres to the Clatsop Community College (located in Oregon - US - on the lower Columbia River). This riverfront land is prime habitat for numerous wildlife, while providing a kind of "living laboratory" to be used by the college students.  The Oregon Watershed Enhancement Board, US Fish and Wildlife Federation, Columbia land trust, Adams Foundation, Wildlife Forever Fund and others played a vital role in making this possible !! ~~   Visit the Brummet's   Main Website Find them elsewhere online  HERE   ~~

Poet Interview

World of Writing - Author Interview  Constantine Dhonau reached out to me in mid July earlier this year with a query to appear on our blog for a featured interview. I was excited because Constantine is a poet and we don't often get the opportunity to feature other poets. Let us tell you a little about him - he was born and raised in St. Petersburg (Florida, USA) and is currently loving his mountain life in Durango (Colorado, USA). He enjoys tea and watching TV shows that do not exceed 30 episodes. His favorite word is "phenomena", and his book is titled Collateral Intentions (June 2021). This is, according to Constantine, " a hybrid poetry book/memoir " that covers over a decade of " poetry, letters, journal entries, and more, followed by a one-page synopsis of what my life was like to give the work context. It follows my development as a human and a writer from 17 to 28 years-old. It begins with the raw beauty, contemplation and the cringe of being a misu...
